Crispy Pork Chops

Here’s a quick and easy recipe for the crispy pork chops in the video. If you’d like to add cheddar to the scalloped potatoes, add them toward the end of baking, as you add the pork into the pan.

Serves 2

2 6-ounce organic pork chops
2 cups breadcrumbs
¼ cup grated parmesan cheese
olive oil
1 tablespoon dijon mustard

In a food processor, blend breadcrumbs and cheese until fine. Pat pork chops with olive oil and dijon mustard.

Coat a heavy-bottomed pan with olive oil and place over medium heat. Add pork chops and crisp; about 3 minutes on each side, cooking them ¾ of the way through.

Finish chops in the oven for 15 minutes. If serving with scalloped potatoes, finish directly in the dish of potatoes. Serve immediately.
