Sparkling Peach and Apricot Sangria

This libation is so refreshing and the perfect drink to celebrate the wonderful fruits of summer!
Makes 6 servings.

2 (750-mililiter) bottles sparkling wine or champagne
5 peaches, peeled and cut into 6 wedges, one peach reserved for garnish
6 apricots, peeled and cut into 6 wedges
1 pint blackberries
2 lemons, sliced
2 apples, cored and cut into 6 wedges
1 orange, sliced
1 recipe Spiced Simple Syrup
½ cup brandy
¼ cup Cointreau
12 mint leaves, plus sprigs for garnish
1 (2-inch) piece of fresh ginger, peeled and thinly sliced

In a glass pitcher, combine all of the sangria ingredients except garnishes; refrigerate for at least 1 hour or up to  1 day. Before serving, stir briskly to distribute the settled fruit and pulp; serve immediately over ice. Garnish with wedges of peach and a mint sprig.
