Makes 1 1/2 cups
Spread this over toasted brioche for a sandwich, place it atop mixed greens for a salad. It’s also an excellent add-in for soup.
8 ounces cooked lobster meat, cut into 1/2-inch pieces
1/4 cup minced Granny Smith apple
1/4 cup finely chopped chives
1/4 cup creme fraiche or sour cream
1 lemon, zest grated and juiced
Freshly ground black pepper Kosher salt
Combine all ingredients in a large bowl. Gently mix togeter; season with salt and pepper to taste. Refrigerate until needed.
